Domaine de Montmain is based in Villars-Fontaine, in the Hautes Côtes de Nuits.
The winery was founded in 1971 by Bernard Hudelot, a scientist and professor of oenology at the University of Dijon:
a pivotal figure in the replanting of the Hautes Côtes de Nuits vineyards starting in the 1960s.

Climate change has allowed the local terroirs to fully express a level of quality and richness that history had already bestowed upon them. All vineyards are cultivated using a “high and wide” training and pruning system, with a three-meter spacing between the vines. This technique—developed exclusively in this region—adapts the vineyard to the terroir, ensuring its sustainable development. Long maceration periods, extended aging in oak barrels, and a lack of filtration endow the wines with excellent aging potential. Since 2018, the Domaine has embarked on an organic conversion process, with the goal of achieving certification in 2026.

The wines of Domaine de Montmain are wines of terroir. Each plot is vinified separately in small vats, in accordance with Burgundy traditions. Harvesting is done manually by experienced teams, with a double sorting process: a first sort in the vineyard for ripe, healthy grapes, and a second in the cellar on a vibrating sorting table. The slow, extended vinification is carried out using traditional methods to extract the maximum flavor. The filling of the barrels is a meticulous process, led for over twenty years by Cellar Master Tomasz Blonski, and followed by regular topping up (ullage) to prevent the oxidation of the wines.
